Our favorite ways to make foam-topped cocktails
- Fresh egg whites – separate from the yolk and add to the shaker with the rest of the ingredients
- Aquafaba – powdered or from chickpea brine – vegan alternative to egg whites. 22ml (3/4 oz) is equivalent to 1 egg white
- Heavy Cream – Add at least 22ml (3/4 oz) to your cocktail
- Espresso – the fresher the better
- ALWAYS double strain with a fine sieve for the smoothest, bubble-free canvas
- Fill your glass to the brim! Our favorite is a 150ml (5 oz) champagne coupe
